Raw Energy Bar
INGREDIENTS
- 150 grs Medjool dates deseeded
- 100 grs of mixed nuts and seeds (I used walnuts, almonds, cashews, hazelnuts, sunflower and pumpkin seeds)
- 1 tbsp of flaxseeds
- ¼ tsp ground cardamom (the seeds of two cardamom pods)
- ¼ tsp orange blossom water
- a large pinch of sea salt
In a blender, first combine the dates, flaxseeds, cardamom, orange blossom water and sea salt together.
Then add the nuts and mix in short pulses until they are roughly chopped and blended but not completely crushed.
Cover a rectangular baking dish with parchment paper and place the date mixture onto it. Top up with another piece of parchment paper and with your hands create an even layer.
Place in the freezer for a few hours or overnight, then slice in the number of pieces you would like and store in an airtight container in the fridge. Enjoy!
